Ingredients:
-1 1/2 c. flour-1/2 c. sugar
-2 tsp. baking powder
-1 tsp. cinnamon
-1/2 tsp. salt
-1 egg
-1/2 c. milk
-1/4 c. oil
-1 c. apple, peeled & chopped
-1/4 c. raisins
Topping:
-2 tbs. flour
-2 tbs. oats
-2 tbs. brown sugar
-1 tsp. cinnamon
-1 tbs. butter

1. In a bowl, combine flour, sugar, baking powder, cinnamon & salt. In a small bowl combine egg, milk & oil. Add wet ingredients to dry and stir just until moist. Fold in apples & raisins. Fill muffin cups 2/3 full.
2. Topping: Combine flour, oats, brown sugar & cinnamon. Cut butter into pieces and add to mixture. Sprinkle over top.
3. Bake at 375 for 15-20 minutes. Let cool.
I make these for my Bug and freeze them and defrost one at a time. To defrost, take out desired amount and leave in fridge overnight. I usually pop in in the microwave on defrost for a few seconds so it's nice and soft!
