{Mmm, Mmm, Mondays} Blueberry Oat Muffins from Becky of Buzzy Bee Creations

It's official here in NY, all the kids are back to school! Bug doesn't go to school yet, but we are always up for a great on the go food to bring when we have busy weekends {as we always do} or for when I'm feeling a bit lazy tired one morning. Becky is sharing her Blueberry Oat Muffin recipe with us today which you can freeze and easily reheat in the morning {if you know me just a little you know I am a BIG fan of foods you can freeze}!

 Back to School Blueberry Oat Muffins


 
I have been on the hunt for a healthy muffin recipe to give the kids as an on-the-go breakfast. Something I could freeze and reheat easily. I spotted this recipe on Babble but our local store doesn't carry oat flour or quinoa flour so I improvised and made a few changes of my own. As I've said before I am not a fan of cooking but baking has won my heart....well mostly what it produces :)

Blueberry Oat Muffins
1 1/2 cups old fashioned oats
1 cup buttermilk
1/2 cup milk (rice or almond milk works well also)
1 egg
1/2 cup brown sugar
3 Tbsp honey
1/3 cup melted butter
2 tsp vanilla
1 1/4 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/4 cup fresh or frozen blueberries
In large bowl, stir together the oats, buttermilk and milk. Let it sit for an hour, or cover and refrigerate overnight. It should soak up all the milk and look like cooked oatmeal.
Preheat oven to 350 degrees. Add the egg, brown sugar, honey, butter and vanilla to the oat mixture. In a small bowl, stir together the flour, baking powder, baking soda and salt. Add to the oat mixture. Add the blueberries and stir until blended. Spoon the batter into muffin tins. Bake for 25 - 27 minutes. Makes about 20 muffins. These can be frozen and heated up individually.

I am thinking this would also be good with bananas or grated apple and carrot. Yum!
